    I did once make lemon icing with Cornflour instead of icing sugar once. I've never used my potting compound in a cake yet. but there's always a first time.

    Perhaps the question should be

    "I take it you won't want some of Beo's baking then?"

    Mind you.. after my last culinary disaster (you had to be careful not to drop it.. I'm on the top flat.. it would have several floors to crash though) and the way I'm feeling today Perhaps me baking tonight isn't such a hot idea.

    At least my Chocolate mousse turned out ok.. As Twirly and my friend Jenn will vouch for

    I'm sure I can risk a slice or so of cake..

    I'm not so disaster free in baking myself.. Once made a chocolate pancake that was supposed to be a chocolate sponge... My cousin still remembers that one!

    My cheesecake and tart tatin both worked last time I tried them, but I'm not sure either of them will travel


    The question should/will be - "Are you be dancin'?"

    I'm sure with your eclectic taste in DVDs Beo, you will not only place that, but give the appropriate reply

    My Chocolate Mousse
    a slight variation on Delia's very chocolatey mousse

    so easy , no cooking as such.

    one Bar Green and blacks Maya gold
    one bar Green and blacks 70 or 85%
    3 large eggs
    40 g Caster Sugar
    Cointreau to taste.

    Separate the eggs carefully.

    Melt the chocolate (I use a microwave in very VERY short bursts, but the traditional method is over a brain maire) leave to cool but NOT so much so it's set hard again. You need to stir in egg yolks to this.. last thing you want is to scramble/poach the egg yolks in hot chocolate!

    Whisk the three egg yolks and add a generous dash of Cointreau (I normally use about a capful and a half. You don't want TOO much or it'll never set!)

    Stir into the warm molten chocolate. It will seize up a bit, but keep stirring so it looks thick and glossy.

    Whisk the three egg whites into soft peaks with the caster sugar.

    Fold carefully into the choc/yolk/Cointreau mixture.

    (Tip. if the choc mix is particularly dense you can take ONE spoonfull of the whites and beat it in to the chocolate to loosen it. but you are trying to preserve the air in the whites so after it's loose use slow mixing movements)

    it should all be a uniform colour and mixed well.

    Spoon into ramekins (I make about 4-6 with the above mix.. depends on the size of the eggs and how much air is in them. 4 is large portions, 5 average, 6 small.)

    Chill in the fridge.

    As there's NO cooking here, this is Probably not suitable for young children, the old or pregnant mothers-to-be.

    I have found a sliver of Scottish Comedy History that you Don't know!! (I wonder if there are any other gaps?) - after all it is on DVD - so i assumed your eclectic collection would house at least one DVD from the Legendary Scottish Duo Francie and Josie ( aka Rikki Fulton and Jack Milroy see here )

    ok.. here's devotion for you.. I PHONED MY MUM!! and she read out her recipe over the phone to me AT WORK! and then I spend a little while trying to convert her "Drops" and "Splashes" and "lumps" to metric measurements.

    As mum said herself this is a trial and error cake. if it looks too dry add more liquid ingredients, to moist add more dry.

    Don't ask me the cup to gram conversion rate!!

    125 g butter
    1/2 cup golden syrup
    1/2 cup black treacle (or one full cup of either, depending on your taste)
    2 cups self raising flour
    1 heaped teaspoon ginger powder
    1 or two lumps of Preserved ginger
    1 teaspoonful of the ginger preserving syrup
    1/2 teaspoon cinnamon
    1/2 teaspoon mixed spice
    1 cup brown sugar
    2 eggs whisked
    1 Cup milk

    Melt butter , golden syrup and add ginger preserving syrup
    In a large bowl, sift flour ginger, cinnamon,mixed spice and sugar
    Add eggs and milk Beat well.
    Put stem ginger through a CLEAN garlic press, and add to mixture
    Add melted butter and syrup mix , stir well to combine.
    Grease and line 2 loaf tins divide mix evenly between the 2 tins.
    Bake in a 180 deg C oven for about 40 mins to 1hr or until top is golden brown and an inserted skewer comes out clean.
    Allow to cool in the tins for 10 mins before removing.

    Or

    Burn fingers and mouth trying it while it's still too hot.

    ok.. are you happy now??

    When I've made this sometimes as mum says it's far too liquid so have spare dry ingredients to hand and be prepared to "fudge*" the recipe

    The Ginger cake sounds delicious - i might try it on my Dad at the weekend - he is a big ginger fan - so anything with real amounts of ginger in it will disappear fast

    Okay.... Beo, you came through for me..... here is the Vanilla Slice with Passion Fruit Icing Recipe:

    2 slices of puff pastry
    1 cup (220g) caster sugar
    1 cup (125g) custard powder
    1.25 litres (5 cups) milk (if you want to really cause a heart attack go for 4 cups of milk and one of cream!)
    50g butter
    2 egg yolks
    1- 2 teaspoons vanilla essence

    For the icing:
    2 cups (320g) Icing sugar
    50g butter, melted (I like a little less butter myself - adjust to taste!)
    pulp of 3 passion fruits

    Preheat oven to 220°C. Line a 22cm square tin with baking paper.

    Roll the pastry to a 24cm square. Prick well with the tines of a fork. Place on a baking sheet. Bake for 12 Minutes or until golden. Set aside to cool. Repeat with remaining pastry.

    Place one piece of the puff pastry in the bottom of the tin. You might need to trim it a bit if you didn't get your measurements right at the start - in fact to be honest - I roll it a bit big so I get to eat the trimmings (Cook's Priviledges!)

    Place sugar and custard powder in a saucepan. Add enough milk to make the mixture smooth and place over medium heat. Add remaining milk and cook, whisking until mixture thickens. Remove from heat and add butter, eggs and vanilla essence.

    Pour the custard immediately over the puff pastry. Place the other layer of pastry on top. Set aside to cool and set.

    Sift icing sugar into a bowl. Mix through butter and passionfruit pulp and a little water if necessary. Ice the slice (that rhymes!). Serve cut into squares. Don't make the squares too big because this is a hefty recipe and too big a slice causes people to groan and complain that they can't eat it all... they do... and then you get the blame for their excess poundage - save yourself the grief and cut the slices a reasonable size!

    Oh and the amount of pulp needed will depend upon the quality of the passion fruits. Add enough to make an icing consistency.

    The magical disappearing Brownies recipie


    INGREDIENTS
    112 g unsweetened chocolate
    170 g butter
    400 g white sugar
    3 eggs
    5 ml vanilla extract
    125 g all-purpose flour
    120 g chopped sultanas


    DIRECTIONS
    Preheat oven to 350 degrees F (180 degrees C).
    Microwave chocolate and butter or margarine in large bowl at HIGH for 2 minutes or until butter or margarine is melted.
    Stir until chocolate is melted. Stir in sugar. Mix in eggs and vanilla. Stir in flour and sultanas.
    Spread in greased 13 x 9 inch pan. Bake for 35 minutes (do not overbake).

    Flapjacks (Now all my secrets are out )

    5oz Butter or hard margerine
    4oz Demerara sugar
    1 Tablespoon of Syrup
    8½ oz Porridge Oats

    Melt the butter, sugar and syrup together in a saucepan. Add the oats and stir together thoroughly.
    Press into a baking tray (I use one 7 x 11 inches).

    Bake at Gas mark 4 (approx 175°C) for about 15 minutes

    Remove from oven when golden brown around the edges.
    Leave to cool for 10 minutes, then slice up.

    Leave to cool completely before removing from the tray.

    Coffee cake, traditional victorian sandwich sponge with coffee cream and chocolate buttons oh its lush!

    i also love coffee ice cream, i know some people think its an acquired taste but coffee cream is delicious.

    A few weeks ago at stevenage ceroc one of the taxi dancers, Garry had a birthday and all sorts of slices of cake was laid out, i picked one up that looked like coffee and it was lovely! I ended up eating two more slices and taking two more home!!!!!!

    it was a naughty little treat and i didn't eat any chocolate for the rest of the week!

    Ohh, you're all so naughty to put these luscious recipes on here! I'm sitting here at work saying "I'll try that one, no that one, oh what about that one, I know I'll make that one and ..."

    You're all very bad ... but I'll be trying one next weekend. I think DT's Chocolate & Pear is the current front runner but Beo's ginger cake is coming up a strong second. Agghhhh, I can't decide
