Exactly the same as the last mind-reading trick... The number you get is always a multiple of 9... Look at the symbols for 9, 18, 27, 36, 45, 54, 63, 72 & 81. They're all the same – and that's the symbol you're thinking of!

I'd be a lot more impressed if it could get the number I was originally thinking of...

Very clever - it 'works', apart from by the maths as before, by changing the symbol allocation each time so you don't notice that it's actually giving you the same answer. Sneaky.
